Chocolate Mousse

Serves 6


Ingredients
175g dark chocolate
4 eggs, separated
350ml cream
2 1/2 tblsps sugar
3 Cadbury Flakes, crushed
Whipped cream, to serve


Method

  1. Melt chocolate in the microwave until smooth, allow to cool slightly and beat in the egg yolks until thick and light.


  2. Whip the cream until quite thick and then fold into the chocolate mix.


  3. In a separate bowl, beat the egg whites until stiff and slowly add the sugar. When quite shiny and thick, fold half the egg whites into the chocolate mix and combine. Then add the second half of the egg white mixture and mix well.


  4. Spoon into 6 ramekins or glass dishes and decorate with the crushed Flake bars and serve with whipped cream.

Vegetarian Nachos

Cooking time - Less than 60 minutes
Serves 4


Ingredients
1 tablespoon olive oil
1 medium brown onion (150g), chopped finely
1 clove garlic, crushed
400g can chopped tomatoes
420g can Mexibeans, drained, rinsed
230g packet corn chips
1 cup (120g) grated cheddar cheese
½ cup (120g) sour cream
1 tablespoon chopped fresh coriander, to serve

Method
  1. Preheat oven to moderately hot (200°C/180°C fan forced).

  2. Heat oil in medium frying pan; cook onion and garlic, stirring about 5 minutes or until onion softens. Stir in undrained tomatoes and beans.

  3. Bring mixture to the boil; reduce heat, simmer, uncovered, 15 minutes, stirring constantly, until mixture thickens slightly.

  4. Place corn chips onto large ovenproof plate; pour bean mixture over chips, then sprinkle with cheese.

  5. Bake uncovered, about 10 minutes or until cheese is melted. Serve topped with sour cream and coriander.

Sizzling Satay Chicken Pizza

Preparation - 10 minutes
Cooking - 40 minutes
Serves 4

Ingredients
Large pizza base with tomato sauce
1 1/2 cups grated cheese blend
1 cup sliced mushrooms
1/4 cup fresh coriander, chopped
1 tblspn oil
1 onion, diced
300g skinless chicken thighs, diced
1/2 cup satay sauce


Method
  1. Preheat oven to 200ÂșC. Place pizza base onto a large oven tray.

  2. Sprinkle with cheese.

  3. Arrange mushrooms and coriander over cheese.

  4. Heat oil in a large non-stick frying pan. Cooking onion and chicken for 5-7 minutes.

  5. Add satay sauce. Heat through.

  6. Carefully spoon chicken mixture over pizza evenly.

  7. Bake pizza for 20-25 minutes or until cheese is golden and bubbling.

Classic Shepherd's Pie


Preparation Time - 10 minutes
Cooking Time - 65 minutes


Ingredients (serves 4)
1 tbs olive oil
1 brown onion, halved, finely chopped
1 carrot, peeled, finely chopped
500g lamb mince
2 tbs plain flour
500ml (2 cups) beef stock
1 dried bay leaf
1 tbs Worcestershire sauce
1 tbs tomato paste
Salt & freshly ground black pepper
4 (about 200g each) desiree potatoes, peeled, chopped
40g butter
125ml (1/2 cup) milk
Melted butter, to brush




Method



  1. Heat oil in a large saucepan over medium-high heat. Add onion and carrot and cook, stirring, for 5 minutes or until soft. Add lamb mince and cook, stirring to break up any lumps, for 5 minutes or until lamb changes colour.

  2. Add the flour and cook, stirring, for 2 minutes or until combined. Add stock, bay leaf, Worcestershire sauce and tomato paste. Bring to the boil. Reduce heat to low and cook, stirring occasionally, for 30 minutes or until sauce thickens. Taste and season with salt and pepper.


  3. Meanwhile: cook potato in a saucepan of salted boiling water for 15 minutes or until tender. Drain well. Return to the pan with the butter. Use a potato masher or fork to mash until smooth. Add milk and use a wooden spoon to stir until combined. Taste and season with salt and pepper.


  4. Preheat oven to 200°C. Spoon lamb mixture into a 2L (8-cup) capacity ovenproof baking dish. Top with mashed potato and use a fork to spread over lamb mixture. Brush with butter. Bake in preheated oven for 20 minutes or until mashed potato is golden brown. Serve immediately
